TCB Wetpak - Classic Oak Ale

Made according to recipe but with a
Danstar Nottingham Ale instead of the
supplied Safale S-04, with the American
Oak chips added to primary, and primary
left to sit for 12 days. Turned out
great, mild bitterness with good head
and mouthfeel, and an oak taste that
starts out quite pronounced and woody at
first, but mellows beautifully as you go
on.

Black Rock Nut Brown Ale

Used this kit to make an Altbier, along
with 500g/500g of Dark and Light dry
malt extract. Replaced the garbage kit
yeast with a Safale K-97 German Ale
yeast, which made an improvement, but
its still a little thin.

Black Rock Whispering Wheat

Used this kit along with a brewiser
wheat booster (it was free), 150g of
chocolate malt and 100g of crystal malt
to make a dunkelweiss. The kit yeast was
typically naff, so I used a leftover
Coopers Wheat sachet. Turned out ok, but
still lacking.

Made to specs using a Coopers Lager for
the bittered extract, and 1728 Scottish
Ale. Needed some aging, but turned out
nice and roasty, with a good bittrness
to it.

Coopers Stout

I also tried the Coopers Stout + Coopers
Dark to 20L with nothing else, and
deliberatly underprimed it (375ml scoops
in 650ml bottles). Turned out fantastic.

Picked this tin up along with a
Brewcraft #76 pale ale pack, and used
the kit yeast. Made a very nice and
inexepensive bitter ale.

Made as per the instructions on the
packet, along with a tin of Coopers
Draught and a Wyeast 1272 American Ale
II smackpack. Turned out great, great
hoppy flavour and getting better with
age.

Used this kit to make a "Real Amber
Ale" along with 1.5kg of Amber Liquid
Malt Extract and a Fuggles hop bag. A
little green at 3 weeks, but definitely
improving.

Coopers Original Lager

This kit is a great base for
experimentation. I just used it along
with the Coopers Brew Enhancer 2, a
brewcraft Dry Enzyme sachet, and a 500gm
jar of rice syrup in an attempt to clone
an Asahi Super Dry. Taste was slightly
off the original as expected, but
everything else matched up nicely.

Coopers Bavarian Lager

This was my second brew, made with the
kit yeast, Coopers BE1 and 500g of
Coopers Light DME. Two weeks in primary,
3 weeks cold conditioning and about 3
months in secondary/maturation. Turned
out to be a pretty tasty brew, easily
the equal of any bought 'premium
lager', though it took an agonising
amount of time for secondary
fermentation to finish.

Brewiser Pilsner

Made with a Brewiser Brew Booster,
Saflager S-23 and a 12g Saaz hop bag
steeped for 10 minutes. Gave it 2 weeks
secondary, and now coming on 3 weeks of
cold conditioning. Pretty tasty brew,
but not really bitter enough for a true
pilsner.

Gold Rush Polar Beer

Made this as part of the Brewcraft
carlton cold clone, with their brew
booster #15 and a sachet of Saflager,
brewed at about 16*C for 2 weeks.
Bottled, primed, secondary for 3 weeks
then 2 weeks of lagering. Made a beer
more similar to Crown than Cold, but
pretty good nonetheless.

Made using the kit yeast, 175g of
lactose, 4 peeled+cored+sliced granny
smith apples inserted into a short
stocking to keep them together, filled
to 23 litres, Fermented for about 10
days at 20*C. Was very good at 3 weeks,
and still good now at 7 weeks, the real
apples give it a genuine appley taste
and aroma. Still far too dry for my
tastes though, next time it will be 200g
of lactose, and filled to 18 litres with
apple and pear juice substituted for
some of the water.

My first kit (came with the equipment)
brewed with the 1kg brewiser liquid
sugar that also came with it and the kit
yeast. Primed and bottled, 9 weeks later
it has a very thin head, light
carbonation and an unusual but not
unpleasant taste. Drinkable, but not
something i would want to recreate.
Would probably benefit greatly from
better yeast and better fermentables.

Tooheys Dark Ale

Made this can using the kit yeast, 500g
of Dark DME and Brewiser Ultrabrew (500g
Light DME, 250g dextrose, 250g
maltodextrin) brewed at 18-20*C for just
over a week. Primed and bottled,
secondary for 1 week and aged for 5 -
came up a treat.
Beautiful taste with a good hint of
burnt flavour, nice carbonation, great
finely beaded head. Will definitely make
this again, possibly with a SAFale yeast
to see what the difference is since
I've heard Tooheys kit yeasts arent the
best.
