Brewcraft Irish Stout

Never used a brewcraft kit before but
will make this again. Used brewcraft #74
Irish Stout converter pack, 250g steeped
and strained Crystal Grain, 200ml
Treacle, 100g corn syrup, Fuggles teabag
(from the pack) and 2x kit yeast (had a
spare). Puratap water to 21 litres.
Temps around 18 degrees. Drinkable
almost immediately and getting better
with each week. Mild for a stout which
is what I wanted. Like some of my aged
porters but without the agony of
waiting. Highly recommend!

Morgans Golden Saaz Pilsener

Made it basic with 400g of malt/dex/CS
mix and another 500g of dry malt. Added
around 80g of honey. Sugars disolved in
water just off the boil and two packets
of kit yeast used (had a spare). Taste
was distinctly Saaz and easy to put down
but no head and an unsettling urine
colour. Very easy drinking though it
doesn't reach its potential. Worth
mucking around with the recipe and
adding a lager yeast.

Well, this is my second go at this kit.
Made it dark again. Used 1kg Liquid
Crystal Malt and 500g malt/dex/cs mix.
Added about 10g fuggles and used kit
yeast. Around 23 degrees for a week. Not
convinced I've got the best out of this
kit yet. It needs a lot of time to get
the sharpness out of the taste. I will
try again with 1.5kg light malt, a
better yeast and maybe a drop of honey.
I'd rate this brew a three but I'll
give the kit a four for potential.

Sorry to lead you down a dark path, but
I retract my previous comments! This kit
has somehow changed (the yeast, at the
very least) and my last brew was woeful
with no chance of redemption. Has a
roasty taste that is not chocolate and a
finish that is just not right. Add five
bucks and get a decent kit. This is
officially my worse beer, though the
Honey Porter I made was up with the
best. Like I said, something's
changed...

Mount Mellick Irish Cream Ale

Used this kit with 500g light dry malt
and 600g of amber dry mix (barley and
wheat malts, dex, corn syrup, sucrose).
250g Crystal grain hot steeped was added
and strained with 15g fuggles. Used
Safale S04 and temps ranged from 18-23
degrees for 8 days. Tasted great almost
immediately but the hops were not
necessary as the kit shines on its own.
The hops will be handy as it ages
though. Excellent at four weeks but will
be a killer in four months!

Coopers Australian Bitter

This is the Thomas Coopers kit, not the
standard Coopers bitter! Made with 1kg
Choc Malt extract, 500g Light dry malt,
500g Corn Syrup and 10g Fuggles to 22
litres with kit yeast. Way to much C.S.
and foam everywhere when opened but the
taste was great. Some off traits from
the yeast due to high temps, I think.
I'm making this again with less C.S.,
more fuggles and at 18-22 degrees.

Morgans Iron Bark Dark Ale

Made this twice - first up with 500g
liquid Crystal Malt and 500g Stout
Booster to 24 litres. Exceptional after
four months though it lacked body and
head. Made again as a Rum Porter with
1kg Crystal Malt, 500g Stout Booster,
200g Molasses (Treacle), 200g C.S.,
200ml Bundy and a fuggles teabag. Made
to 22 litres. Took three months before
it was smooth enough to drink but now
it's excellent! Plus it cures insomnia!

Made as per instructions and using kit
ingredients, plus the medium IBU
extract. Ok kit if you're making a pale
ale, but hardly a German Lager.
Acceptable taste straight from a cold
stubbie, rather than a glass.

I've made this kit twice, against all
advice to the contrary. First brew was a
Honey Ale with Morgans Caramalt extract,
12g Goldings, 400g Leatherwood honey and
100g Yellowbox. Hated it at first but
after three months it was sensational -
red, clear and tasty. I've just made it
again without the honey - 1.5kg Coopers
amber malt, 500g Stout booster, 150g
Corn Syrup and 14g Goldings. After two
weeks it looks great and tastes good,
though it needs more time to blend. Its
a great kit if you remember these
things: One, the kit yeast needs a
higher temp than some (23-25 degrees) to
get going. Two, it's not a porter!
Forgive that and it's a good beer, and
three, it's easy on the hops - add your
favourite.
