Coopers Sparkling Ale

I have made this kit a number of times
according to the instructions on the can
and using the yeast under the lid or a
Safale yeast. Good results each time.
This time I propogated the yeast from a
couple of stubbies of the commercial
Sparkling Ale. Brewed at 18 to 20
degrees for 7 days and then 7 days in
secondary.
After one month in the bottle it tastes
superb - similar to the real thing. I
know from experience that this kit gets
better with bottle age.

Made with Grumpy's medium bittered malt
extract and Saflager 34/70 yeast.
Brewed at 10-12 degrees for 2 weeks.
Racked and cold conditioned at 0-2
degrees for 6 weeks. Now been in
botttle for 5 weeks. Lovely crystal
clear pale golden colour with nice white
head. Lovely crisp lager.

E.S.B Extra Special Stout

Made according to directions with Safale
yeast provided. Made to 18 litres and
brewed at 18 to 20 degrees for 7 days
then racked to secondary for a further 7
days. Big stout taste with plenty of
bitterness, creamy head and smooth
finish. Very drinkable after 2 weeks
and continues to improve with bottle
age. Excellent brew.
